The Brew Ha-Ha:

White Tea is comprised of new, young tea leaves and buds from the Camellia Sinensis plant that are only harvested a few short weeks each Spring.  Originally grown in China, White Tea production has expanded in recent years to other tea growing countries, such as India, Nepal, & Africa. Consisting of two main styles, Bai Mu Dan, also known as White Peony, and Bai Hao Yin Zhen, more commonly known as Silver Needles, White Tea is labor intensive, handpicked; allowed minimal oxidization and drying in the sun, called Withering, and is appreciated for its delicate flavor and wonderfully soft, sweet, succulent cup.  The closest tea to the bush, White Tea is packed with antioxidants and other health affirming benefits.

Chai is a combination of tea and spices that was developed in India, thousands of years ago.  Though recipes vary from region to region, the basic combination has remained the same for the masala, spice, base, which is cardamom, ginger, cinnamon, cloves, & black peppercorn.  Typically brewed and the ingredients strained from the rich liquid, the drink is completed by adding in, or simmering with, milk.  It is then sweetened with honey or sugar.  Though some Chai recipes can be steeped like other teas, a fuller-bodied cup can always be found when the zesty ingredients are allowed to marinate into a rich concentrate.

Chai is the Hindi word for “tea”, and often misused like, “Chai Tea”, which literally translates to “Tea Tea”.  Though steeped in ancient roots, Chai has grown beyond its origins to mean a delectably spicy and robust flavorful beverage that promotes digestive and heart health, boosts the immune system, regulates blood sugar, and aids in stress reduction that is high in antioxidants.  It is one of the most innovative drinks devised by man.
