A rare and highly sought after tea from tea lovers around the world, this Huo Shan Huang Ya, which translates to a “yellow bud picked in the Spring” has its origins all of the way back to the Tang Dynasty in China. A vibrate, yellowish hue in the cup with a sweet, chestnut-like aroma, and umani notes of savory corn and hay, this heirloom tea a far more mellow tasting than traditional green teas. Though basically harvested and processed the same as green tea, Yellow Tea undertakes an extra step where the tea’s color and flavors are sealed in by wrapping the leaves, before they are completely dried, which is more akin to fermented tea production.
The Brew Ha-Ha:
Green Tea comes from the unoxidized leaves of the Camellia Sinensis bush that are harvested during the early Spring. It is one of the least processed types of tea, containing the most antioxidants and beneficial polyphenols, that positively affects digestion, weight loss, liver and heart health, mental and cognitive acuity, as well as enhance skin care, anti-inflammation, and longevity. It is known to have anti-cancer agents and help against type 2 diabetes. It can be steamed, ground, or pan-fried to achieve certain flavor profiles, and is simply wonderful whether served as a hot or cold beverage.
