This traditional Anxi Oolong is smooth and rich with a creamy, floral flavor.  Known as Tie Guanyin (Ti Kuan Yin) in its mother tongue, this luxurious tea's legend claims that a poor, elderly farmer named, Wei, would walk the long trail to the dilapidated village temple each week to tidy it up.  There, the Goddess of Mercy, Guanyin, appeared to the farmer in a dream, telling him about a cave behind the rundown temple where a treasure awaited.  Following his dream, Wei discovered the cave and a single tea shoot which he planted in his field. This single tea shoot took root and became a treasure to the land and its people, where they still celebrate an iron statue of the Goddess that has blessed them.

Oolong Tea is one of the most restorative and healthy teas to drink.  It improves brain function, prevents cancer, increases bone density, stabilizes mood, and is good for the heart.  Delicious to drink, the leaves for the various Oolong Teas are carefully and meticulously cultivated for their exact wilt, curl, oxidation, withering, rolling, and flavor.  Often considered a dark green tea, Oolong is in a class all on its own, with a wide array of tastes.

    Use 8 grams of tea with boiling water in a 150ml gaiwan or teapot:

    • 10 second rinse
    • 1st steep – 25 sec.
    • 2nd steep – 20 sec.
    • 3rd steep – 30 sec.
    • 4th steep – 45 sec.
    • 5th steep – 75 sec.
    • 6th steep – 2 min.
