This is a tea to be savored. Unadorned, and steeped as it is in your cup for a truly rare and exceptional experience. Bai Hao Yin Zhen, also known as, Silver Needles is among the most revered of Chinese White Teas. Gathered and dried for only a few days during each early spring, the fresh, young silvery down buds are gently withered as they air dry in a traditional process that is as old as tea itself. Wonderfully sweet and refreshing with a fine, mellow buttery-cream taste that produces a light sun-dipped pale ivory hue in the cup.
The Brew Ha-Ha:
White Tea is comprised of new, young tea leaves and buds from the Camellia Sinensis plant that are only harvested a few short weeks each Spring. Originally grown in China, White Tea production has expanded in recent years to other tea growing countries, such as India, Nepal, & Africa. Consisting of two main styles, Bai Mu Dan, also known as White Peony, and Bai Hao Yin Zhen, more commonly known as Silver Needles, White Tea is labor intensive, handpicked; allowed minimal oxidization and drying in the sun, called Withering, and is appreciated for its delicate flavor and wonderfully soft, sweet, succulent cup. The closest tea to the bush, White Tea is packed with antioxidants and other health affirming benefits.
